Simple Heirloom Tomato Salad

Tomatoes scream summer and our punnets of  little mixed heirloom cherry tomatoes are bursting with flavour. Lemon highlights the sweetness of the tomatoes and this refreshing salad is so delicious you might want to make double the quantity.

• 1 punnet mixed heirloom cherry tomatoes
• 1lemon zested and juiced
• 1tsp finely chopped preserved lemon
• 2tbs lemon infused olive oil
• 1tbs oregano leaves

Chop the tomatoes in halves, slices and quarters randomly.

Toss them in the lemon juice and rind, preserved lemon and lemon oil.

Tip everything onto a serving plate and scatter the oregano leaves over the top.

Sprinkle with salt flakes and freshly ground pepper.
