Swanbourne Market — Carrot Cake Rock Cakes

These lovely little rock cakes are tender on the inside and have a crispy knobbly outside.

They are simple to throw together and only require a wooden spoon and a bowl to create.

They are perfect to pack in a lunchbox or to share with a cup of tea

1 large carrot, grated

200g pitted prunes, chopped

1/4 cup sultanas

zest of one orange

50g brown sugar

100g melted butter

3tbs plain yoghurt

200g self raising flour

1 1/2tsp mixed spice

Heat the oven to 200c.

Put the carrot, prunes, sultanas and orange zest in a bowl.

Stir in the sugar, melted butter and yoghurt.

Tip in the flour and stir until just combined.

Spoon 8 mounds of batter onto a lined tray, place in the oven and immediately turn the oven down to 180c.

Bake for 20-25 minutes.
